Top 5 ways with hummus
Lasagna
This vegan lasagna is our go-to meal whenever we’re hosting dinner or dropping off a dish at a friend’s house. It is so easy to customise for any dietary needs. We get asked for the recipe all the time, so here it is. The hummus “cheese” also works great on pizzas.
Fritters
Wanting your fritters to form well but don’t want to spend your life savings on eggs? Swapping out Lisa’s Pumpkin and Kumara hummus works great. It’s also a quick way to add flavour and depth to a veggie burger recipe.
Salad dressing
Here are two dressing variations that will work for whichever hummus you have left. Mix them straight in the container, and add water or oil to taste. Both of these elevate your salads to pro level.
Classic: ½ cup of hummus, juice from ½ lemon, 1 Tbsp mustard, 1 tsp cumin, 2 Tbsp water or oil. Great with a kale or romaine lettuce salad.
Green goddess: 1 avocado, ¼ cup of hummus, juice from 1 lime, ½ tsp spices (curry, cumin, paprika, whatever you like), 1 clove garlic, 2 tbsp olive oil. This dressing is great in any salad or on a Buddha bowl.
Stuffed capsicums
Roast the capsicum for about 20 minutes on 190 C while you mix your favourite couscous and chopped veggies. We love toasted pine nuts and fresh red onion in ours. Peter Gordon shocked me in the kitchen when he told me you can just add hot water to couscous and not heat it on the stovetop. This should tell you how easy this recipe is.
Stuff the roasted capsicum with couscous, and add a big dollop of hummus to take it to the next level. This works with every flavour of Lisa’s hummus, but we love the Smokey Garlic hummus flavour.
Loaded baked potato
Make your favourite baked potato (smashed, toasts, twice-baked, loaded, etc) and then top with hummus and spices. Think of it as a sour cream alternative. We like to mix ¼ cup hummus, 1 Tbsp olive oil, 1 tsp cumin, 1 tsp smoked paprika, and some fresh herbs, salt and pepper. If you want the twice baked potato effect, you can scoop out the potato and mix with this and then broil them for up to 10 minutes.
